Spinach

Spinach: Spinach is rich in many nutrients, including Vitamin A, Vitamin C, Vitamin K, iron, folate, and potassium. Spinach is chock full of fiber. Eating too much fiber can cause gas, cramping, and abdominal pain. Spinach is rich in oxalate, a naturally occurring substance found in almost all plants. Spinach also helps in controlling diabetes. It has a low glycemic index (GI), thus it does not cause a spike in your blood sugar levels (You can refer to the Glycemic Index Food Chart to find out GIs of other foods that can be included in your Diabetes Diet Plan). It is also an excellent source of fibre and low in calories, making it an ideal food to be used in recipes for diabetes.
